I got the idea for this recipe from my Mom. They are delicious and flavorful – and, in my opinion, they don’t even need to be topped with anything. I recommend using a low fat or non-fat Greek yogurt. I am lucky, and have a local Kroger – which sells a Kroger brand Greek Yogurt that is absolutely delicious! Milled Oat Bran is used instead of flour or a pancake mix – which adds a whole grain carb source with a bit of protein. The addition of Any Whey and V-Core Vanilla Bean Whey Protein (1 scoop each) lends both flavor and sweetness to these pancakes (and packs a protein punch!) – and allows us to omit the addition of any sugar. I find blueberries to be great in them – but have heard great things about adding craisins or crushed nuts.
To prepare: Mix all dry ingredients well with a fork. Whisk egg whites separately until frothy, then add to dry ingredients with yogurt and berries. Mix well and cook over medium heat (300 degrees), turning once.
